Creamy Cucumber and Tomato Salad Recipe

Ingredients
  

SALAD INGREDIENTS

  • 2 English cucumbers
  • 3 medium ripe tomatoes
  • ½ medium red onion
  • ½ cup parsley
  • ½ cup dill

DRESSING INGREDIENTS

  • ½ cup full-fat Greek yogurt
  • ¼ cup mayonnaise
  • 3 garlic cloves
  • ½ TB oregano
  • ½ tsp salt
  • ¼ tsp pepper

Instructions
 

  • Dice tomatoes and cucumbers into 1/2 inch (1 1/2 cm) large chunks. Slice onions and let sit in a bowl with cold water for 10 minutes to remove that pungent flavor. Chop parsley and dill.
  • In a medium-sized bowl, combine all the salad ingredients: cucumbers, tomatoes, onions, parsley, and dill. Set aside.
  • In a separate bowl, whisk together the dressing ingredients: Greek yoghurt, mayonnaise, pressed garlic, salt, and pepper.
  • Pour the dressing over the salad and stir gently to coat everything. Adjust salt and pepper if needed. Refrigerate for at least 20 minutes before serving. Enjoy!

Notes

- The cucumbers in the salad can be peeled or unpeeled. I prefer unpeeled cucumbers - the salad looks better and it has more crisp and crunch.
- If you need to prepare this salad in advance, I recommend you prepare and toss everything together besides the cucumbers and tomatoes. Cut the fresh cucumbers and fresh tomatoes no more than a couple of hours in advance for the best texture and crispness. These veggies have a lot of water content that will be released because of the salt, leading to a watery dressing and softer veggies. If that happens, drain the juices and add a bit more dressing, if needed.
- Another trick, in case you need to make this salad in advance is to remove the seeds of both the cucumbers and the tomatoes. This way, the veggies will release less water and the dressing won't become watery that fast.
- Another option for making this salad ahead would be to salt the cucumbers with a teaspoon of salt and let them sit for around 30 minutes in a sieve. Then rinse under cold water and remove excess water with a salad spinner or kitchen towels. This way, the cucumbers release their excess water before adding them to the salad.
- I like to dice my cucumbers in large chunks but you can also slice them half length-wise and then cut in thick slices, around 1/3 inch (8-9 mm).
- You can use whatever fresh herbs you prefer - fresh chives, fresh basil, etc.
- For a more colorful and sweet creamy tomato salad, you can throw in some fresh corn. It will add a pop of color and some bursts of sweetness to balance out the tanginess of this cooling salad.
- You can finish off your salad with some toasted sesame seeds, or chopped nuts, for some crunch and texture.
