As this easy side dish only has a few ingredients, I recommend that you use the ripest and freshest cucumbers and tomatoes you can find. It will make all the difference.
Best Types of Cucumbers and Tomatoes to Use in This Salad
For this delicious recipe, I like to use English cucumbers or Persian cucumbers as they have almost no seeds, are crisp, and don’t require peeling, which makes the prep very easy. But other varieties are also great, such as Japanese or Kirby cucumbers.
If you use overripe or regular cucumbers, which tend to be a bit more watery, I recommend you deseed them first so your salad won’t become soggy.
For the tomatoes, use any type of tomato you have on hand. I particularly love heirloom tomatoes I grew up with. My parents used to grow them in our garden, and they were so sweet tasting. Not to mention huge! You could make a whole salad from one single tomato, amazing!
Other varieties that will work great, as well, are Roma tomatoes, cherry tomatoes, and grape tomatoes. All of these are sweet varieties with a meaty texture, the cherry tomatoes being the juiciest with a higher water content.
Can I Make Ahead this Creamy Cucumber and Tomato Salad Recipe?
Yes! This creamy cucumber salad has the best flavor when chilled, so it can be made ahead, but no more than a couple of hours. It will still keep for 2-3 days in the fridge in an airtight container. But since these veggies have a lot of water content, you will end up with a watery salad by the next day. Don’t worry though, just drain the juices and add a bit more dressing, if needed. Keep in mind that the longer the salad stays, the more it will lose its crunch and crispness, and the tomatoes and cucumbers will start to soften.
