I am a big fan of asparagus and I am happy to have it in my meals any time. Whenever I need something quick yet elegant enough to impress, this is it!
I love that there’s not much you need to do with this amazing veggie. You just have to let these beautiful bright green stalks shine. This is actually the secret – just let these juicy, tender asparagus spears be the star of the show and you’ll get compliments every time, I promise you!
This Roasted Asparagus with Lemon is the perfect side dish not only for a weeknight dinner, but also for backyard parties, summer barbecues, or even posh holiday dinners such as Christmas or Thanksgiving.
And if there are any leftovers – which I find hard to believe – you can easily incorporate them in other delicious dishes like pasta primavera, a morning toast with creamy cheese, an elegant risotto or a decadent lasagna.

Asparagus is a very nutrient-rich veggie, and is an excellent source of vitamins (A, C, E, K, and B9) and essential minerals (like potassium, calcium, iron, and phosphorus), which helps support overall health.
It improves bone, heart and gut health, boosts the immune system, lowers blood pressure, and has significant antioxidant properties.
It can also easily be integrated into a weight loss diet as 1 cup of roasted asparagus has only 87 calories. So if you are in a mood for a light but delicious meal, you can confidently enjoy asparagus as it has few calories, and is low in fats and carbohydrates.
How to Choose Perfectly Fresh Asparagus
To choose the best quality, fresh asparagus, always look for firm and tightly closed tips; they should not be spreading. The spears should not be wilted, or have any odor. Look for bright green stalks, with purple tips, which is a sign of freshness. Avoid asparagus stalks that have a faded or yellowish color.
Both thicker spear, as well as thinner ones are perfectly fine and great for cooking.
Thicker vs Thinner Asparagus Spears
This could be a debate, but it is actually up to your preference, and both thick or thin spears are great for cooking.
That being said, contrary to general belief, thicker asparagus stalks are actually better than thinner ones. This is because thicker spears are more tender, and have more nutritional value (i.e. more vitamins, nutrients and fiber) than thinner ones.
Also, when cooked (roasted, grilled, sautéed), they hold better, while thinner spears can be easily overcooked. Thicker asparagus is also less fibrous if cooked properly.
But don’t worry, thinner asparagus is also great and you can enjoy it even raw, especially in salads. These thinner spears cook very quickly, so can be perfect for steaming, stir-frying, or quick dishes like omelets, quiches or pastas.
Dietary Modifications of this Roasted Asparagus with Lemon Recipe
Vegan and Dairy-free
Use only olive oil or vegan butter instead of regular butter. If you want to use cheese, replace the Parmesan cheese with vegan cheese. The rest stays the same.
Gluten-free
This Roasted Asparagus with Lemon is naturally gluten-free. If you use Parmesan cheese, just make sure it is gluten-free. Also, check the additives in the butter, or simply stick with olive oil.
Make Ahead Tips
Roasted asparagus is most delicious fresh, right out of the oven. However, here are a few tips and tricks to give you a head start in case you need to save some time:
Prepare the fresh asparagus spears – wash and trim the woody ends up to 24 hours in advance. Wrap the asparagus stalks in damp paper towels and store them in the refrigerator in a zip lock bag or in an airtight container to keep them fresh and crisp.
Prepare the lemon-butter sauce – in a small bowl, combine the olive oil, melted butter, lemon juice, lemon zest, salt and pepper. Store in a small jar in the refrigerator. Before using, microwave for 10-15 seconds to melt the butter and shake well.
Marinate the asparagus in advance – to boost the flavor of your roast asparagus, you can toss the asparagus stalks in the marinade up to 2 hours in advance. Store them in a zip lock bag or in an airtight container in the refrigerator. When ready, just spread them on a baking tray lined with baking paper and pop in the oven.
Make ahead – as mentioned above, roasted asparagus with lemon is best right out of the oven. However, you can roast it up to 2 hours in advance and serve it at room temperature, especially if serving as part of a buffet.
Storage Tips
Since we love roasted asparagus, we never really have any leftovers. However, in case you do, here are a few options for storing it.
– Refrigerating – after the roasted asparagus has cooled completely, store it in an airtight container in the fridge for up to 3 days. Even though its texture will be slightly softer than fresh roasted asparagus, it will still be delicious.
– Freezing – I don’t recommend freezing roasted asparagus. It has a high water content and will get mushy when thawed.
– Reheating – for the best flavor, reheat the roasted asparagus for 5–7 minutes, in a 350°F (175°C) oven. You can also sauté it for 3-4 minutes in a skillet, with a knob of butter. I don’t recommend microwaving it, as it becomes soggy and mushy.
How to Use Leftover Roasted Asparagus with Lemon
You can use leftover roasted asparagus in a variety of ways, as it is very versatile, but here are a few of my favorite uses.
Breakfast – Dice the asparagus spears and add them to your breakfast dishes, such as fried, poached, or boiled eggs, omelets, scrambled eggs, frittatas, quiches (check my Quick and Healthy Breakfast Quiche Recipe with Spinach), salads, flat-bread egg-rolls, cheesy grits, ricotta or cream cheese toasts.
Main courses – Chop you leftover roasted asparagus and add it to more consistent lunch or dinner dishes such as stir fries, pastas (check my Authentic 3 Ingredient Fettuccine Alfredo), lasagnas, risottos, fried rice, or pizzas.

Frequently Asked Questions
Can I Use Frozen Asparagus Instead of Fresh?
I recommend using fresh asparagus, as the texture will not be the same. Since asparagus has a very high water content, almost 93%, it will become mushy once roasted. If, however, you must use frozen asparagus, pat it dry thoroughly, but expect a different, softer texture than fresh asparagus.
How Long Does It Take to Roast Asparagus?
Generally, it takes 10-12 minutes for thinner asparagus spears, and 15-20 minutes for thicker spears, at 400–425°F (200–220°C). The asparagus is properly cooked if it is crisp-tender when pierced with a fork and is slightly browned on the edges.
Do I Need to Peel the Asparagus?
You do not necessarily need to peel asparagus. Especially thinner or medium stalks do not require this step. Even for thicker stalks, I only recommend snapping the woody part off, but if you want, you can peel only the lower part of the stalks.

Roasted asparagus with lemon goes well with a variety of dishes but here are just a few ideas. It pairs beautifully with grilled or roasted meats such as chicken, pork, lamb or beef. How Do I Know When the Asparagus Is Done?
The asparagus is done when its color is a bright green, and it is lightly caramelized on the edges. The stalks should be crisp-tender when pierced with a knife or fork, but not soft and mushy.
How Do I Keep Asparagus From Getting Soggy?
You can avoid soggy asparagus by spreading the spears out on the baking sheet and avoiding overcrowding. This way, the asparagus will roast properly, rather than steam. Also, make sure you do not overcook it. So check with a fork, at the recommended time, to see that the stalks are tender but still have a slight bite.

Roasted Asparagus with Lemon (Ridiculously Easy)
Ingredients
- 1 lb (500 g) asparagus
- 1 TBSP olive oil
- 1 TBSP butter (melted)
- zest of 1 lemon
- juice of 1/2 lemon
- ¼ tsp salt
- ⅛ tsp pepper (or more)
- 2 TBSP Parmesan cheese (optional)
- 1 TBSP sesame seeds (optional)
Instructions
- Preheat oven to 430°F (220°C).
- Wash and pat dry the asparagus spears. Snap off the woody ends of the asparagus: hold each spear with both hands and bend it by gently pushing your thumbs - the thick ends will snap where the woody part ends. After the first 2 stalks, you can use them as guidance to cut off the rest of the woody ends with a knife. (about 1-2 inches)
- Place the asparagus spears on a baking tray lined with baking paper. Drizzle with oil, fresh lemon juice, lemon zest, and sprinkle with salt and pepper. Toss everything well with your hands, then spread the asparagus out in a single layer.
- Roast for 10-12 minutes if the spears are thinner to medium in size, or 15-20 minutes if they are thicker. The asparagus will be ready when it's crisp-tender when pierced with a fork or knife and the ends are lightly browned. Do not overcook the asparagus! It should still have a nice vibrant green color, and not be wrinkly and wilted.
